Lemon Confit Chicken!

Tasty marinated chicken with candied lemon and herbs de Provence.

Ingredients for 4 persons:

1.2kg chicken legs, 4 lemons, 15cm ginger root, 2x 200gr sugar (400gr), ½ cup olive oil + 3tbsp, 15gr salt, 1 tbsp crushed black peppercorns, 1 cup herbs the province, ½ bunch cilantro, 2 tbsp angel hair chilli

Brush the lemons under hot water to eliminate the wax layer of the skin.

Cut the lemons in small parts and do the same with the ginger!

Put the lemon and ginger in a pan and add ½ litre water and the firs 200gr sugar!

Warm up to 90° Celsius and let simmer for one hour. Then add the other 200gr sugar en let simmer for one hour again (always at 90° Celsius)

Chop the chicken in small parts (bite size)

Add the salt, pepper and herbs de Provence to ½ a cup of olive oil, mix and pour over the chicken.

Mix again to give the chicken a good coating and let marinade for one hour.

Add a few tablespoons of olive oil in a frying pan (medium heat) and sear the chicken lightly brown

Take an oven plate; add the chicken and the candied lemon/ginger with some of the syrup.

Mix all well and place in the oven for 15 minutes at 200° Celsius.

Meanwhile; roast the angel hair chilli very lightly in a dry frying pan and chop the cilantro grossly.

After 15 minutes let the chicken rest for 5 minutes and mix with the angel hair chilli and cilantro.

Serve with some salad green or any side dish you like
