Advieh Khoresh

Advieh is the Persian term for spice mix or spice blend and Khoresh is the term for stews in the Persian cuisine.

Advieh khoresh blend is used in stews or for roasting grilled or roasted meats.
In Iranian cuisine, there are many khoresh with many ingredients. Vegetarian khoresh are common. The Iranian cuisine is characterized by the use of saffron to give a distinctive and fragrant character.
The most popular khoresh are “khoresh gheimeh”, “khoresh ghormeh sabzi” and “khoresh fessendjan”.
Other particular ingredients are; the dried black lime (limu Omani), Rose petals or Rose buds.
Advieh khoresh is a warm, aromatic and floral spice blend that can be used for any type of stew and goes also very well with seafood.
Families and restaurants often got their own signature khoresh blend for the different type of stews they make.

The quantity of each spice in your spice blend changes the flavors from one spice mix to another, I recommend you to go easy on the stronger spices like cumin and black cardamom; they can easily overpower the spice blend.
Don’t forget the importance of quality and freshness when you purchase your spices and always prefer whole spices instead of powdered.
Here is an example;
2 limu Omani (loomi), 3cm turmeric root, ½gr saffron (whole threads), 2 pieces of Mace, ½ stick of Ceylon Cinnamon, ½ tbsp of Black peppercorns, 4 green cardamom pods (seeds only), 1 black cardamom, 1 tsp cumin seed, 2 tsp coriander seed, 1 tbsp rose petals or buds, 2 slices dried ginger root, 1 bay leaf, 3 cloves
Always use salt separately from the spice mix to season; this gives you the freedom to use the quantity of spices you prefer to add in your stew or on your roast.
