Advieh, Adwiya a Persian Blend

Advieh (which comes from the Farsi word meaning "spice mixture") is a key component of signature Persian dishes

This highly aromatic seasoning blend is used extensively in traditional Persian cooking.

It has some common ingredients with Indian garam massalé but has generally a mild and more floral aroma.

There are different advieh’s depending on specific dishes and their composition varies from the Persian Gulf to the Caspian Sea, common ingredients include turmeric, cinnamon, cardamom, cloves, Rose petals or Rose buds, cumin, and ginger. It may also include ground golpar, saffron, nutmeg, black pepper, mace, coriander, anise, nigella or sesame.

Some regular spice blends are;

Advieh polo or berenj: a more floral aroma due to the rose petals with 4 to six spices used to flavor rice and pilafs.

Advieh khoresht: (khoresht means stew) it has from 8 to 15 spices and is more intense in aroma. This blend often includes dried limes. It can also be used as a multi-purpose blend.

Advieh torshi: this blend can include many spices; it is used to make pickles and is also a great blend for marinades.

Advieh mahi: ideal for fish and seafood

Advieh ash: used for soups

The spice mix on the image below includes twenty ingredients and is a multi-purpose blend.

It works perfect as a dry rub or marinade on different meats like lamb, beef, mutton and game, roasted or in stews.

It gives a wonderful kick to whole vegetables soups and is a surprising alternative to the famous “ras el hanout” in the couscous.

Feel free to play with the proportions of the ingredients but moderate the powerful spices like cumin, cinnamon or anise, they can easily overpower the other more delicate spices.
